Blackberry Cobbler

Easy blackberry cobblerSummer is all about the cobbler. I think cobbler is like the messy, quirky best friend to pie (like in a romcom). It's delicious although maybe not as cosmetically perfect as pie. I personally am a big fan of any kind of cobbler: crumbles, buckles, spoon cakes, etc. I will eat them all, believe me. This particular cobbler leans a little more toward being a spoon cake, because you spoon the batter over the berries before baking. My favorite blackberry cobbler recipeYou can use fresh or frozen berries. And you can choose your favorite. I went with all blackberries—tis' the season. But strawberries, raspberries, blueberries or a mix of any/all would be be divine as well. Choose your own adventure.Black berry cobbler ingredientsBlackberrry spoon cakeBest blackberry cobbler recipeBlackberry Cobbler, makes 3-4 ramekins

16 ounces blackberries, if frozen allow to thaw before use
2 tablespoons brown sugar
1/3 cup + 2 tablespoons flour
1/4 cup sugar
1/3 teaspoon baking powder
1/4 teaspoon salt
1 egg
2 tablespoon milk
1/4 teaspoon vanilla extract
5 tablespoons melted, then cooled butter

In a bowl mix together the blackberries and brown sugar. Distribute evenly among your baking dishes.

In a bowl whisk together the flour, sugar, baking powder and salt. Stir in the egg, milk and vanilla extract. Last stir in the melted butter. This should create a thick paste kind of batter.Blackberry cobbler and vanilla ice creamSpoon the batter over the berries. Bake at 350°F for 35-40 minutes until the edges begin to brown. If you double this recipe you can bake this in a 8×8 square baking pan. If doubling allow to cook for an additional 8-10 minutes.Blackberry cobbler from SpGServe warm with a big scoop of vanilla ice cream. The melted ice cream mixing in with the warm berries is the best! Enjoy. xo. Didier

  • Sounds like a fantastic journey! I am in! you can find me @ tlou18 on Instagram!

  • Yum! This looks amazing. I’ll definitely try it out when blackberries come into season. I’m all about stone fruit right now, so I might try it with nectarines or peaches until the blackberries get here!

  • I thought I would send a message here incase you guys don’t see the reviews on iTunes. Can you please fix the update that just happened with the app you created! I boughts all the “extras” when I originally bought your app- so like 6 or 7 dollars spent. I updated later to see you have most of them for free- and just updated again- and now I have lost over HALF of the doodles, phrases and such.
I think your app is awesome and love using it!! But so frustrated with this!
    Thanks ladies for your help!

  • Ooh that sounds really lovely! And I have all those ingredients here, so I don’t really have an excuse not to make them 😉

  • I love cobblers so much that despite the fact that I’ve stuffed myself with dinner, my stomach just rumbled a little bit, and my brain said that it’s not insane to run to Kroger in the middle of the night to get some blackberries or any berries really.

  • Whitney f-Yes, don’t worry. You still have all your purchases. We would never take away a users purchases they made with us! This sometimes happens with iOS updates. What you need to do is hit the “Restore Purchases” button. It’s in the center of the screen when you are viewing an in app purchase that you had previously made. Sorry for the confusion! In the future please feel free to email our technical support team: [email protected] and they will get back with you faster and with more clear answers than I can in a comment (they can show you screen grabs if needed to help you find the buttons you need to restore purchases). Thanks for your support!

  • Christina L- I didn’t take it. Trey actually took that one. He was in the room as I was photographing this cobbler recipe. He was kind of just teasing me but I ended up liking the photos so I used one. 🙂

  • i love the way you’ve made them in individual ramekins, rather than one big dish – they look amazing!

  • do you think you could throw this cobbler recipe in the crock pot?

  • These look so good! I make a kind-of blueberry cobbler in a pie pan, but I love the individual servings. I don’t know how that would affect baking times. I can’t wait to try this version!

  • There were blackberries in the fridge so I totally just made a couple precious baby sized cobblers. Loved it!

  • Oh yum! I just posted a blackberry pie recipe on my blog yesterday. Blackberries sure are delicious!

  • Didier, I made these last night. It is the middle of winter where I am living at the moment (New Zealand) so I had to use frozen blackberries but oh my GOSH this is still the most exquisite pudding! Perfect treat for a cold winter’s night 🙂

  • These looked amazing so I made them tonight I have little ramekins but it worked perfectly. I made 3 peach ones (added a little cinnamon) and 1 strawberry one for my picky eater. Success! The entire family loved them. That never happens!

  • I love blueberry cobbler. That is one thing that I miss living in the south. I never thing about making it myself. I love the individual servings. Great recipe.

  • Made this last night with some frozen strawberries. SO YUMMY! I want to try it with peach and blackberries next time. Thanks, Didier!
