Raspberry Basil Mojito

Raspberry Basil Mojito (click through for the recipe. so refreshing!!)Hey, friends! I'm here to share my new favorite happy hour recipe! It's fresh, herbal-y, and citrus-y. Mojitos were my first favorite cocktail, and I still love them, but finding new combinations is my current obsession.

I'm thinking about planting an herb garden on my porch this weekend. Have any of you done this? This time of year when every single store is selling herb plants I just want to be a part of that world. Dream big, Helen. 🙂

Raspberry Basil Mojito (click through for the recipe. so refreshing!!) Needed: White rum, club soda, fresh basil, fresh mint, fresh raspberries, two limes, basil raspberry simple syrup (recipe below)

Raspberry Basil Mojito (click through for the recipe. so refreshing!!) Raspberry Basil Simple Syrup, makes two cups.

1 cup water
5-10 raspberries
3-6 basil leaves

In a small pot, combine all ingredients and bring to a simmer. Crush the raspberries and basil leaves with a whisk or spoon as you stir the mixture. Continue simmering and stirring until the sugar has completely dissolved.

You can keep this syrup covered for two weeks or longer in the refrigerator. You can substitute your sugar for Truvia for a skinny alternative. :)

  • Oh man, this sounds delightful! Mojitos are one of my faves and you really can’t beat fresh raspberries and mint 🙂 What kind of herbs do you want to grow?

  • I was thinking of planting a few herbs for my kitchen too but was a little nervous because we don’t get a ton of sun in there. Fingers crossed! This looks delicious!

  • That glass is gorgeous! And I’m pretty sure the drink doubles that! Will definitely be making this one soon, beautiful post!

  • Looks amazing <3 <3 When are you going to announce the winners of the Kelly Moore bags?

  • You have to have the herbs! Recently I have discovered an amazing “weed”, purslane. If you muddle it and mix it I place of or in addition to the mint in a mojito, wow blow your socks off! It brings a great citrus addition, AND it’s a great source of omega 3’s, bonus!

  • That looks absolutely lush! I’m making that raspberry syrup as soon as the warm weather hits. Although, since I live in England, I fear I may have a long wait! The perfect summer drink. Delish!

  • this looks delish!!

  • Don’t be intimidated by planting a herb garden. It’s really easy. Here in S.C., my lavender, oregano, Italian flat-leaf parsley, rosemary, and thyme last through the winter. I grow mint for the sole purpose of mojitos–place it in pots or it will take over everything. Oregano can do that a bit, too. The only herb I have to replant every year is basil. One spin for gin and tonic–rosemary twig for flavor and fun.

  • Is there a particular reason you included the basil flowers? They’re edible, but apparently are a bit bitter. Did you notice a bitter taste?

  • This looks so yummy. I’ve been playing around with cucumber and ginger but definitely going to try this out.

  • This sounds delicious!! When the weather in England gets a bit better I am definitely going to give this a whirl!

  • Gorgeous! I love me a good mojito : ) Your drinks always look so pretty! I just tried your mini margarita flights last night with friends – the spicy grapefruit was a HUGE hit!

  • I’m too distracted by your adorable heart sweater. For sure will try this, I LOVE mojitos!!!

  • Lovely post. sounds yummy – we may have to make that with lemons out here in CA, we are having a lime shortage! I’ll let ya know how it tastes. Thanks for the yummy inspiration!

  • That looks delicious! This is random, but have you guys thought about posting a list of wedding registry items you would recommend? It would be super helpful for brides-to-be such as myself. 😀

  • Oh, It look amazing. Like the Mojito twist!
Do you know about freezing down the syrup? Is it doable?

  • I absolutely need to try this !! Mojitos are my favorite cocktails !!
    Thanks for this idea !!!
    XO Marion.
