One Pot Creamy Broccoli Pasta

One pot creamy broccoli pasta (via abeautifulmess.com) It’s official. I’m addicted to one pot pastas. It’s easy. It’s pasta. Dinner’s ready so quick. It’s pasta. Easy to clean up after. It’s pasta.

Did I mention it’s pasta? Guys, I LOVE PASTA!

One pot creamy broccoli pasta (via abeautifulmess.com) If you haven’t heard, one pot pasta is a THING. Type that into Pinterest and you’ll get about 1.5 million results (OK maybe not quite that many, but a lot). I first got hooked a few years ago when I tried out . And I’ve been into it ever since. In fact, if you like red wine (who doesn’t?!), you should check out too while you’re at it.

One pot creamy broccoli pasta (via abeautifulmess.com) One Pot Creamy Broccoli Pasta, serves 2-3.

9 oz. fettuccine (I used Bertolli—the fresh kind found in the refrigerated section)
3 cloves garlic, minced
1 tablespoon butter
2 teaspoons olive oil
2 cups seafood stock
1 1/4 cups whole milk
1/2 cup grated Parmesan cheese
1 cup chopped broccoli florets
salt + pepper to taste
chopped parsley for garnish

First, sauté the garlic in the butter and olive oil over medium heat for 1-2 minutes. Then add the noodles, stock, milk and broccoli. Bring to boil, cover, and reduce heat to a simmer for 8-9 minutes. Remove the lid and allow to cook for another 8-9 minutes until the liquid has mostly evaporated/absorbed into the noodles and broccoli. Toss in the cheese during this last 8-9 minutes of cooking.

One pot creamy broccoli pasta (via abeautifulmess.com) As you could probably tell from the photo before the pasta is cooked, I used a fresh (store bought) pasta. You could easily use a dry pasta instead, but you may need to cook the dish covered for an additional 2-3 minutes as fresh pasta cooks a little faster than dry.

One Pot Creamy Broccoli Pasta

  • 2 teaspoons olive oil
  • 2 cups seafood stock
  • 1 1/4 cups whole milk
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped broccoli florets
  • salt + pepper to taste
  • chopped parsley for garnish

Instructions

  1. First, sauté the garlic in the butter and olive oil over medium heat for 1-2 minutes. Then add the noodles, stock, milk and broccoli. 2. As you could probably tell from the photo before the pasta is cooked, I used a fresh (store bought) pasta. You could easily use a dry pasta instead, but you may need to cook the dish covered for an additional 2-3 minutes as fresh pasta cooks a little faster than dry.

  • Haha, I JUST shared a one-pot pasta recipe yesterday on my blog and someone recommended that I add broccoli! Pasta is definitely one of my favorite comfort foods, but I get to feel a little less guilty when there’s some veggies in there 🙂 This looks delish!

  • Great, quick, recipe, Didier…..my littles love broccoli so I’ll definitely be trying this! For the commenter above, a vegetable stock would work wouldn’t it?

  • I am making a one pot pasta tonight for dinner! I may have to try it one time with seafood stock instead of chicken. Yum yum!

  • Oh my goodness. This looks delicious. Lately I have been trying to make healthier food choices, but pasta is my weakness. Now I can have pasta and not feel as guilty. Thanks for sharing this recipe. I cannot wait to make it.

  • This looks great! I have to tell you that two of my favorite quick and easy go to recipes are from you – 5 bean chili and spicy peanut noodles – I love them both and make at least one of them every week. Thanks for posting them!

  • This is EXACTLY the type of pasta I love-creamy, cheesy and broccoli-y! This is so easy, I will be trying this! Love the photos too 🙂

  • I actually had not heard of this before but I’m so excited to try it now. Yours looks delicious! Glad I’m procrastinating on dinner by getting my blog reading done – I now know what to cook for dinner!

  • it seems so easy but my one pot dishes burn or get thick at the bottom . . and i fancy i know how to cook, too!
worth another go cause is screen-licking-good-looking. thanks for sharing it. ( i’m crazy about a nice vegetarian dish.)

  • Oh my gosh! This looks so good – and only one pot to clean up after?! The best! It reminds me so much of one of my favourite packet pasta’s my mum used to cook when I was a kid, you know you just add milk and cook it (I really don’t mean that in a bad way haha – I absolutely love them still – such comfort food). I’ll definitely have to try this out! 🙂

  • I was just thinking about what to cook for my vegetarian sister who’s coming to stay this weekend- you’ve solved Friday night supper so thank you! This looks so delicious.

  • Oh yum that looks absolutely delicious! And interesting twist with the seafood stock, why that in particular?

  • Yum. I too love pasta and my favourite vegetable is broccoli. What could be a better combination.

  • This pasta looks so easy and delicious, I’m going to give this a try! Thanks for sharing 🙂

  • Hi Caroline! It should be in the section with the chicken and vegetable stock. Either one of those would work too. 🙂 -Jacki

  • As a food blogger and full time caterer…one pot meals are my FAV!!!! Sometimes cooking for 300 has me hankering for only having to clean ONE pot at home :)…gonna give this one a try with some GF pasta. Thanks!!!

  • Hey! I love that the blogging world has so many connections! I love this blog and it’s great to see that you read it too!

    Laura

  • I know, too cool! I have been reading SpG for years and their sister-power is what inspired Katie and I to start our blog last year!

  • I made a vegan version tonight! I used unsweetened almond milk and veggie stock for the liquid but if you wanted the full-fat creaminess of whole milk I would recommend cashew milk (can buy in stores or easily make your own!). For the cheese, I used Go Veggie! brand Parmesan lactose-free cheese. With a little salt and pepper, this will be a good meal this college student can stretch out for a few meals!

  • I just saw your recipe yesterday and decided to try it today.. It is sooo good and simple..
I even add some mushrooms, and cherry tomatoes as the garnish
    Thanks for the recipe, Didier!!

  • I too am absolutely in love with PASTA! However, evidently I’ve been living under a rock because I didn’t know one-pot pasta dishes were a “thing”. I’m really excited to hear this though and can’t wait to try your recipe out! Is there a specific reason you used seafood stock instead of veggie stock/etc? Would I be able to substitute? Thanks for sharing!

  • This looks so amazing! I should really try this out – I always can eat pasta. Thanks for sharing!

  • Yes! I can eat this! I love the idea of using seafood stock I’ve never heard of that. I guess I could use vege stock as well. I’d need to use lactaid for the milk, but that should be fine. Can’t wait to try this one! Thank you!

  • I’m definitely making this tonight! Yummy!
